Today, I want to share with you two different recipes for this classic dish, one that includes bacon and one that keeps it vegetarian, so that everyone can enjoy this delicious pasta.

Pasta Carbonara with Bacon

If you're a meat eater like me, you'll love this take on Pasta Carbonara with quality bacon slices in the mix.

Ingredients

• 1 pound pasta
• 4 eggs, room temperature
• 1/2 pound bacon, chopped
• 1/4 cup grated Parmesan cheese
• 2 garlic cloves, chopped
• 1/2 cup heavy cream
• Salt and pepper to taste

Instructions

1. Cook pasta in salted water according to package directions and reserve 1 cup of pasta water.
2. In a large pan, cook bacon on medium heat until crispy and remove from pan. Drain most of the bacon grease, reserving about 2 tablespoons in the pan.
3. In the same pan, add garlic and sauté until fragrant, about a minute.
4. In a bowl, whisk together eggs, heavy cream, and Parmesan cheese. Add salt and pepper to taste.
5. Add cooked pasta and bacon to the pan with garlic and stir to combine.
6. Remove pan from heat and add egg mixture, stirring constantly until eggs thicken and coat the pasta. If the sauce is too thick, add reserved pasta water, one tablespoon at a time.

Vegetarian Pasta Carbonara

This version is just as delicious and satisfying, but it’s vegetarian-friendly. Perfect for all my veggie friends out there!
